Description of my issue: Backup on update not activating despite being ticked in the Plugin. The icon on the baseline has not been present since update to v8

This is a known issue. You can run a backup manually before running the Joomla Update.

Also note that the interface has changed from an icon at the bottom of the page to a message appearing at the top of Joomla Update since version 7.5.3. See the release notes on https://www.akeeba.com/download/akeeba-backup/7-5-3.html
