Hello,
I have a website with Admin Tools for Joomla! 3 installed on it, and I was wondering if I could still have access to the "old" (not updated) Admin Tools features (including access to the back-end via a personalized admin link) if I don't renew my subscription.

yes. An inactive subscription will only prevent you to update, but your website will still working.
