Hi, we've built two pages into our site for a small group that can only see them through a dedicated link — these pages do not appear in the menu and are disallowed from the robots.txt file. We would notification when these pages are visited, much like our email alerts when an administrator logs in, but I don't see documentation to create that type of notification in the Email Templates.

Is there a way to do this using the tools provided in AdminTools?

Thanks!

There is no such feature in Admin Tools nor do we plan to add one.

The best way to handle it is creating a new user group in Joomla (let's call it Controlled Access Group) and a new access level (let's call it Controlled Access) which only contains this user group. Give these pages (articles and/or menu items) the Controlled Access access level in Joomla's interface. Now they can only be accessed by users logging into the site using a user account that is assigned to the Controlled Access Group. This is the only real way to control access to pages.
