Description of my issue:
I get emails whenever anyone creates an account on my site.

This started after installing admin tools although I can not see an option for it.

What you are describing is how Joomla! works out of the box. It has nothing to do with Admin Tools. You could edit your user and uncheck the option to receive system email, but that would disable receiving ALL emails meant for administrators.
