Hi

Everything works fine but the update suggests on the production site to upgrade to fof 4.1.1. I'm afraid to run it because it broke everything last time.
I also see that I have a lot of fof versions.
It was an old joomla 3 site but I don't have many extensions.
What do you advise me
1/ is it important to upgrade to 4.1.1 or can I wait a few months?
2/ deleting old fof files?

I have removed the code which removes FOF 4 from Joomla 4 sites. That's the only change in 4.1.0. You don't have to update if you don't want to.
