 My current webserver is getting old (is using Fefora) and has issues - so I am on an acute time frame! - I have 50 + joomla sites on version 3.4.8 - what server platform would you recommend to support joomla in the best way possible? and - can you recommend an organization/company that work with joomla platform and do server support ?

I'd recommend asking for pricing information at SiteGround and Rochen. They have very fast servers and they are the official Joomla.com and Joomla.org hosts respectively. Support has been fast from both companies according to my experience. Remember that what you're looking for is either a VPS or a managed server, not a dedicated server ("dedicated" means that you take responsibility for server maintenance and support).
