After trying to use an incrementel Backup, with Stealth Mode on, i'm not able to reach the Site anymore.
Where can i disable the stealth mode manually?

Hello,
Stealth mode is just a directive inside the .htaccess file.
Simply replace your current .htaccess file with Joomla default one and you should be good to go.
