Can you help diagnose why our backup duration has jumped from roughly 1 hour to roughly 8 hours without any changes being made to our application. I've attached two examples of the slow and fast log files.

Everybody will be able to see its contents. Do not include usernames, passwords or any other sensitive information.

You are trying to back up a gigantic database table which you don't need to even include in the backup: #__acym_history
. This table just includes the newsletter click history.
Go to Akeeba Backup. Make sure profile #1 is selected, if you have multiple profiles.
Click on Database Tables Exclusion.
Find the #__acym_history
table and click the second icon from the left next to it, the one that has the tooltip "Do not backup its contents" when you hover over it. Make sure its background has turned yellow.
Now take a backup. It will be done in about 5 minutes instead of 8 hours.
