As a security precaution, I set all my website's folders to 755 permissions and all my files to 644 permissions. However, each time the Akeeba Backup runs, the log file (e.g., akeeba.backend.log) gets changed to 666 permissions. How can I prevent that?

I am not sure this is really a issue of concern, let me check with Nicholas.

You can't really change that, it's the default permissions given by your host when creating a new file. Since the file is not executable and it's palced in a directory which is not web-accessible (you have protected your tmp directory from direct web access, right?) it should pose no security concern.
